Growing up in Texas, cheese enchiladas are a way to test a Mexican (or Tex-Mex) restaurant on if they are really up to snuff. A good cheese enchilada should consist of an extra flavorful sauce, wrapped around a tortilla, holding in all.

  2. You need 1/2 of onion chopped (optional).
  3. You need 1 (16 Oz) of pack of sharp cheddar or Mexican blend cheese.
  4. It's 1 of large can of red enchilada sauce.
  5. You need 1 pack of corn tortillas white or yellow.
  6. You need of Anything else you want to add like grilled chicken or taco meat.

Make sure that you throughly coat each tortilla with the sauce and maybe even pour a little over the top before you add the cheese. Place into the baking dish seam side down. My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Simple Cheese Enchiladas step by step

  1. Optional sauté onion in butter with salt and pepper.
  2. Preheat oven to 365.
  3. Mix cream cheese and half of the package of cheese and onion together until well mixed,(optional, also add the extra ingredients if desired in this step).
  4. Take a small bowl and pore in some of the enchilada sauce..
  5. Take a torilla and dip on the the sauce and remove wiping some of the excess off..
  6. Take about 1” ball of cheese filling and squeeze it into a cylinder shape and wrap the tortilla around the filling and place in a deep sided pan.
  7. Repeat step 5 until you are out of room in the pan, then take the left over cheese filling and sprinkle it on top of the tortillas..
  8. Cover the tortillas in the enchilada sauce from the can and the remaking from the bowl.
  9. Cover the entire set of enchiladas with the rest of the cheese and place in the oven..
  10. Bake for about 15-20 minuets or until the cheese has completely melted on top of the enchiladas.

I made this for my family for around a dollar per serving. In a large saucepan, combine first six ingredients; bring to a boil.
