I have marinated the Pomfret twice, also applied the oil, Cilantro-Chili Paste separately so that the inside & outside of the Pomfret gets properly marinated and you will also get the nice taste of Cilantro.   2. You need 5 of garlic (mashed).

  4. Prepare of Corriander seeds (heat and ground).

  6. You need 5 of red chilli (mashed).
  7. Prepare of Salt.
  8. It's of Pepper.
  9. Prepare 3 tbsp of sweet soy sauce.
  10. You need 2 tbsp of chilli sauce.
  11. It's 2 tbsp of honey.
  12. Prepare 3 of lemongrass (cut).
  13. It's 4 of banana leaves.

Instead of carp, I'm using black pomfret fish for the grill. It's meaty, healthy, and not to expensive though. Using honey and sweet soy sauce, this recipe is really good. Been looking to cook pomfret for some time, mainly because the fish is always available fresh at the local market, so I picked this recipe as it seemed easy to make.

Grilled Black Pomfret instructions

  1. Clean the black pomfret fish (also can ask the seller to do it), then rinse with lime juice to avoid the fishiness..
  2. Mix all the ingredients for the marinade. Mashed garlic, shallots, chilli, chilli sauce, ground corriander, pepper and lemongrass..
  3. Marinade the fish for about 20 minutes. Then sprinkle some salt just right before it's grilled..
  4. Heat the charcoal. Wrap fish with banana leaves, then grill..

Some notes though, I didn't realize this should be grilled, so I ended up using a frying pan, it still came out tasting pretty good. Spicy Grilled Black Pomfret (Bawal Hitam). Picture quality can be improved. but that aside, as I have already told you, do not discount these Malaysian style (Otak-Otak Ikan, Sambal Tumis Ikan Pari & Chilli Soy Fish) spicy grilled ikan bawal/black pompret.
